Wheylayer The project, initiated in November 2008, involves several companies monte williams and European research monte williams institutes with the aim of investigating the possibilities of using whey as a barrier layer to oxygen monte williams in films for food packaging. The films of PE and PP have good water vapor barrier properties but require polymers or copolymers such as EVOH or PVDC to have the necessary oxygen barrier. These materials are effective as a barrier but have economic implications and hinder recycling. The coating whey protein proved capable of ensuring high oxygen barrier under conditions of low or intermediate moisture in synthetic materials with comparable barrier terms. It is therefore open the possibility of replacing the synthetic barriers by natural barriers based on whey. The tests also showed that the films and laminates flooring wheylayer have adequate mechanical properties for application in food packaging. The whey layer adheres well to the film. They are also active in developing packaging solutions with anti-microbial monte williams and anti-oxidants. Tests with various food products are being made to investigate the performance of the protection monte williams layer Wheylayer against microbial contamination of packaged foods, and also in retarding rancidity, as compared to conventional materials. The future work of the partners of this project is oriented to project the good results obtained at laboratory scale and pilot for a commercial and industrial scale. The project may have a significant impact on several aspects. First, an application creates added value for existing byproducts of whey protein. Furthermore, replacing petroleum-based plastics, and recyclability of the films increases.
